Brown Sugar Topped Meatloaf
- ½ cup of ketchup
- ½ cup of brown sugar, packed
- 1 ½ lb of ground beef, lean
- 2 eggs, slightly beaten
- ¾ cups of milk (whole or 2% are best)
- ¼ tsp of black pepper, ground
- 1 ½ tsp of salt
- 1 small of chopped onion
- ¼ tsp of ginger, ground
- ¾ cup of salted soda crackers, ground into fine crumbs
Equipment:
- 5 X 9 meatloaf pan
- Medium mixing bowl
- Wooden spoons
- Waxed paper and shortening or cooking spray
Method:
- Preheat the oven to 350° Fahrenheit.
- Lightly grease the 5 X 9 loaf pan with shortening and waxed paper or spray it with cooking spray, being sure to cover the sides and the bottom of the loaf pan.
- With your fingers or a wooden spoon, press the brown sugar firmly into the bottom and corners of your loaf pan, being sure to cover the entire bottom of the pan. Then pour and spread an even layer of ketchup on top of the brown sugar.
- Using a wooden spoon or your hands, thoroughly combine all of the remaining ingredients in a mixing bowl. Mix thoroughly with a wooden spoon or with your hands.
- Shape your mixture into a loaf shape about the size of your loaf pan and place your loaf on top of the brown sugar and ketchup in the bottom of the pan.
- Bake meatloaf in your preheated oven for about an hour. You will know it is done when the juices run clear.
