Original Spicy Pumpkin recipes Soup
Here’s the best pumpkin recipe – the original pumpkin soup.
Ingredients:
- 1 medium pumpkin
- head of onion
- 2 cloves of garlic
- 50 g butter
- salt
- ground black pepper
- 1 teaspoon of paprika,
- nutmeg on the tip of a knife
- 40 ml sherry
- 200 ml cream
- 0.5 l of vegetable broth
Soup dressing
- 100 g pumpkin seeds
- 100 g onions
- 0.5 tsp of starch
- any croutons
- 2 tbsp. tablespoons of butter
- 200 g cherry tomatoes
- 6 tbsp. spoons of parmesan
Cooking instructions:
- Wash and dry the pumpkin, cut off the top and remove the seeds first, and then all the pulp. Rinse and dry the seeds. We use part of the seeds in this dish, and I leave the other part for future use.
- Melt the butter and sauté the onion and garlic. Then add pieces of pumpkin and nutmeg, salt and pepper, pour in sherry (you don’t have to add), vegetable broth, and simmer everything for 20 minutes.
- After the time has elapsed, beat the mixture with a blender to make a puree and add the cream. The fat content of my cream is 20%.
- Roast the pumpkin seeds lightly. Dip the chopped onion in the starch mixture and fry in oil. And put it all in the ready-made puree soup.
- I usually made the croutons for this pureed soup myself (see the recipe here), but this time l took ready-made ones with bacon flavor. And you know l liked it. With different flavors of croutons, you will get a different taste of this of dish every time. This is amazing!
- I had a beautiful idea for serving this soup. You can pour the soup into the pumpkin and decorate the edges of the pumpkin beautifully. It seems to me it will look very nice.
Serve the cherry tomatoes and parmesan separately on a platter.
Advice:
- Put the croutons in the soup last, so that they do not become soft, but retain their wonderful crunch.
- You can adjust the thickness of the soup yourself. Do this with broth or cream, or add a little more pumpkin.

Recipe Stewed Pumpkin with Meat
Pumpkin goes well with any type of meat. Try this recipe, you can add your favorite spices that go well with the pumpkin. You can make the dish a little spicy, depending on your tastes.
Ingredients:
- 500 g pumpkin pulp
- 300 g of any meat
- 1 tbsp. l. butter
- 2 cloves of garlic
- 1 tsp honey
- 2 tbsp. l. lemon juice
- 0.5 tsp dried herbs.
Preparation:
- Cut the meat and pumpkin into small cubes.
- Place in separate bowls and marinade with the ingredients provided in this recipe.
Leave to marinate for half an hour, an hour, it all depends on the meat you choose. - After the marinating time, fry the meat with your favorite oil. Combine the fried meat in a baking dish with a pumpkin. Add a little butter, pour in the vegetable/meat broth, and bake in the oven for 50 minutes in the oven until tender. You can add sour cream, it will not spoil the taste of your dish.
Baked pumpkin in sour cream sauce with garlic and herbs
Baked pumpkin in sour cream sauce is a good idea of a side dish for any meal, or it can be an independent dish for those who are on the right diet. You can easily remove this or that ingredient or add it on the contrary. For example beans.
Ingredients:
- 0.5 kg pumpkin,
- 150 ml fat sour cream,
- 3-4 cloves of garlic,
- 1 bunch of parsley or dill
Cooking instructions:

- Simmer for 10-15 minutes, covered.

Greek pumpkin recipe
Ingredients:
- 600 g of butternut squash pulp,
- 2 cloves of garlic
- 2 medium tomatoes
- 1 tbsp. l. olive oil,
- 1 tsp dried basil, if there is fresh it will be better,
- sea salt.
Preparation:
- Fry the diced pumpkin in olive oil until golden brown, salt, and season with basil.
- Add the grated sliced tomatoes and garlic to the pan.
- In the end, pour in a couple of tablespoons of water or vegetable broth and bake in the oven for half an hour. You will get an amazingly tasty dish, the aroma will be amazing.
Pumpkin and garlic donuts
Bun dough:
- 150 pumpkin puree,
- 150 ml of broth in which the pumpkin was boiled,
- 500-550 g of sifted flour,
- 1 egg,
- 1 tsp. Fast-acting yeast,
- 0.5 tbsp. l. sugar,
- 1 tbsp. l. butter,
- 1 tsp L. Salt.
Garlic filling:
- 2-3 cloves of garlic,
- 0.25 bunch of dill greens,
- 0.25 tsp. salt,
- 3 tbsp. l. vegetable oil.
Instructions:
- Dissolve yeast and sugar in warm pumpkin broth, when foamy “cap” appears, mix with egg, butter, pumpkin paste, salt, and flour.
- When the dough has doubled in volume, shape into buns, wait until they rise, and send to the oven.
- Pour hot donuts with a mixture of chopped herbs and garlic, vegetable oil, and salt.

Pumpkin pancakes

Bun dough:
- 200 g pumpkin
- 1 egg,
- 1 small onion

Preparation:

- Pre-fry the onion a little in a separate frying pan.

Pumpkin salad
You will need:
- 200 g pumpkin
- 3-4 quail eggs
- 1 clove of garlic
- 2 tbsp. l. olive oil
- greens; arugula, spinach
- your favorite spices
- The egg can be replaced here with pieces of cottage cheese or salted cheese.
A little black or white sesame seeds, pre-frying it in a dry frying pan.
Preparation:
- Boil the pumpkin and cut it into thin strips as you can.
- The main thing is not to overcook the pumpkin too much.
- Chop the garlic and add to the pumpkin, egg, herbs, and a little cheese.
Drizzle the salad with oil and sprinkle with sesame seeds. - Add spices at the end.

Baked pumpkin with meat
You will need:
Bottom layer:
- 650 g of any minced meat,
- 1 onion
- 1 carrot
- 3 tbsp. l. frozen green peas,
- 3 tbsp. l. corn,
- 40 ml soy sauce
- 30 ml ketchup,
- 1 tbsp. l. flour,
- 1 clove of garlic
- 0.3 tsp ground coriander,
- salt and pepper.
Top layer:
- 0.5 kg pumpkin,
- 0.5 kg of potatoes,
- 0.25 onions,
- 2 cloves of garlic.
Preparation:
- Fry onions and carrots in oil with minced meat, add the rest of the ingredients for the bottom layer of the casserole, simmer for 5-10 minutes and transfer to a baking dish.
- For the top layer, mix the boiled pumpkin, potatoes, onions, and garlic and put this mixture in an even layer on the minced meat, and bake in the oven at a temperature of 180 degrees Celsius.
- Finally, sprinkle the cheese on top for a golden crust and place in the oven for another 5-8 minutes.
Pumpkin pancakes with cheese
You will need:
- 0.5 kg of pumpkin,
- 220 g of hard cheese,
- 2 eggs,
- 1 cup sifted flour
- 2 cm fresh ginger root
- 3 cloves of garlic
- herbs.
Preparation:
- Grate pumpkin pulp and cheese on a coarse grater, rub garlic and ginger root on a fine grater and mix with egg, flour, chopped herbs, salt, and pepper. Leave the dough to stand for about an hour, and then fry the pancakes.
You can serve sour cream with these pancakes, your favorite jam. If you are baking pancakes for children, adjust the amount of garlic and ginger you put in.
Baked pumpkin with potatoes
You will need:
- 5 potatoes,
- 350 g pumpkin,
- 1 onion
- 100 g of hard cheese
- 3 tbsp. l. melted butter and vegetable oil,
- 1 clove of garlic
- 1 tsp Provencal herbs or your favorite herbs,
- 0.5 tsp sea salt.
Preparation:
- Cut the pumpkin and potatoes into thin slices, pour over the sauce of vegetable and butter, garlic, seasonings.
- Leave to marinate for 20 minutes, then transfer to a baking dish, alternating with chopped onion half rings.
- Bake in the oven for 45-50 minutes, then sprinkle with grated cheese, put in the oven for another five minutes.
Dessert pumpkin
The good thing about this pumpkin dessert is that you can add different ingredients to the pumpkin every time and you will always have a new dessert. Try it, experiment and you might end up with your signature family dessert.
You will need:
- 1 kg pumpkin
- 150 g sugar, a handful of your favorite nuts,
- 1 tbsp. l. honey can be replaced with maple sire.
Preparation:
- Place small pumpkin slices in a roasting sleeve, add sugar and stir, tie the edges, make a few punctures in the sleeve with a toothpick. Bake in the oven, serve with honey and nuts.
- Any dehydrated fruit can be added.
Pumpkin casserole with dried fruits
You will need:
- 0.5 kg of butternut squash,
- 250 ml cream, 50 g each prune, raisins, dried apricots,
- 1 egg,
- 70 g sugar.
Preparation:
- Boil the pumpkin cut into pieces until tender, transfer to a baking dish, sprinkle with raisins, and cut strips of prunes and dried apricots.
- Whip cream with egg and sugar, pour pumpkin and dried fruits, bake in the oven.
Pumpkin jelly “Autumn”
This is a wonderful dessert for evening tea when it is no longer so warm outside the window.
You will need:
- 300 g of pumpkin,
- 2 tbsp. l. gelatin,
- 50 ml of water,
- 3 tbsp. l. sugar, a pinch of cinnamon or vanilla
Preparation:
- Pumpkin pulp, cut into cubes, sprinkle with sugar in a saucepan, cook for half an hour, constantly draining the juice.
- Turn boiled pumpkin into mashed potatoes with a blender, add gelatin dissolved in water in a thin stream, add cinnamon or vanilla.
- Pour into molds and wait for solidification.
Candied pumpkin
Pumpkin can easily replace unhealthy candy. Candied pumpkin can also be used to decorate cakes or pastries.
You will need:
- 1 kg pumpkin
- 1 orange,
- 1 cinnamon stick
- 1 kg of sugar
- 700 ml of water,
- 2 carnation buds
Preparation:
- Cut the pumpkin into thin cubes, dip it together with cinnamon and cloves in hot sugar syrup cooked from sugar and water.
- Boil for five minutes and cool – repeat this process three times.
- Spread the pumpkin on a baking sheet, dry in the oven at 50 degrees or in an electric dryer.

- 2 tbsp. l. sour cream,
- 100 g sugar,
- 1 egg white,
- 400 g sifted flour,
- 10 g baking powder,
- 1 tsp. vanilla, a pinch of salt, roasted pumpkin seeds,
- 1 bag of vanilla,
- 1 yolk
- 1 tsp. milk for lubrication.
Preparation:
- Mix flour, salt, sugar, baking powder, vanilla, add butter and rub with your hands to make a crumb.
- Add pumpkin puree, egg white and sour cream, chopped pumpkin seeds.
- Roll out a thin layer of the resulting dough, cut out the figures, brush with yolk whipped with milk and put in the oven to bake.
Pumpkin tortillas

You will need:
- 1.5 kg of pumpkin,
- 0.5 kg of flour,
- 400 ml of kefir,
- 1 tsp. salt and baking soda,
- 0.5 cups of sugar,
- butter.
Preparation:
- Knead a soft dough of flour, kefir, salt and baking soda, divide into ten parts and roll out 10 tortillas.
- Beat the baked pumpkin with sugar with a blender, put a couple of tablespoons of pumpkin on one half of the cake, cover with the other half, secure the edges with a fork.
- Fry the tortillas in butter until tender.

Pumpkin citrus cream
An amazingly delicious dessert that is worth cooking at least once to fall in love with it forever!
You will need:
- 150 g pumpkin puree,
- 120 g sugar,
- juice from 2 oranges,
- 100 g butter,
- 2 yolks,
- 1 egg,
- 3 tbsp. l. orange peel.
Preparation:
- In a saucepan, whisk the orange juice, zest, sugar, egg and yolks with a whisk, place in a water bath.
- Cook, stirring occasionally, until smooth, add pumpkin puree, cook until thick. Grind the mass through a sieve, mix with butter.
- Store in a glass jar in the refrigerator for about a week.
Delicious pumpkin pie
You will need:
For the dough:
- 180 g frozen butter,
- 250 g sifted flour,
- 8 tbsp. l. ice water,
- a pinch of salt.
For the filling:
- 600 g pumpkin puree,
- 4 eggs,
- 350 ml condensed milk,
- 1 tsp. ground cinnamon, a pinch of nutmeg,
- 0.25 tsp each. ground ginger and cloves,
- salt on the tip of a knife
Preparation:
- Chop the sifted flour into very fine crumbs with a knife with grated frozen butter, pour in ice water, quickly knead the dough, put in the freezer.
- After half an hour, roll out a cake from the chilled dough, put it in a mold, form high sides and send it back to the freezer for 15 minutes.
- Bake the cake in the oven, prick it with a fork and cover with a sheet of foil.
- Mix the ingredients for the filling, pour onto the baked dough in a mold, bake for about an hour and a half
Pumpkin pie with cream
You will need:
For the dough:
- 150 g pumpkin,
- 3 eggs,
- 0.75 glass of flour,
- 0.75 glass of sugar,
- 1 tbsp. l. sour cream,
- 1 tsp. baking powder, a pinch of salt
For cream:
- 1 glass of sugar,
- 500 ml of milk,
- 4 tbsp. l. semolina,
- 150 g butter,
- 1 tbsp. l. citrus peels.
Preparation:
- Cook semolina from milk, semolina and sugar, when it cools a little, beat with a mixer, adding a piece of butter and adding the zest.
- Mix the ingredients for the dough, bake a thin rectangular crust, wrap in a roll and cool.
- Unroll the cake carefully, brush with cooled cream and roll again.
